Favorite Easy Summer Recipe -- Gazpacho in the Vitamix

I've been making this recipe about once a week for the last month or so. It is so easy and fresh and delicious. Really, there is nothing like ripe summer tomatoes.

This Gazpacho is fast to make in my Vitamix, so it's a great weeknight dinner.

With all of the tomatoes, cucumbers, basil, and red peppers in season in our garden and in farmer's markets, Gazpacho is perfect for late summer.


This soup also made for a delicious picnic several times for us this summer, during a day of kayaking on the Patuxtent River, on a trip to the beach, and once on a long road trip to New York.  

Can I vent for a moment about one of my biggest pet peeves?  

(Okay, two. One is flavorless tomatoes in the winter.)

The second one, the one that really gets me going, is the dismal dining options on the interstate. On a recent road trip up I-95, these were the fast food options at the rest stop.  


No good options. It makes me sad. As my friend says, his favorite thing to get at McDonald's is an empty bladder. Mine too!

Instead, I made this Gazpacho before we left and stored it in a Mason jar in our cooler. We took a break from driving and had a delicious picnic in a beautiful park not far off the highway.


A little planning went a long way and we enjoyed delicious food on our long trip. The soup took about 25 minutes to make, and my husband keeps raving about it and asking me to make it again.

So while tomatoes are still deliciously ripe and flavorful and in season, try this refreshing, cleansing soup on a hot summer day!

Easy Summer Gazpacho

Serves: 4
Time: 30 minutes, plus time to chill

Summer in a bowl! This soup is delicious pureed with chunks of veggies in it.

• 1 1/2 pounds vine-ripened tomatoes, chopped (about 6 medium tomatoes)
• 1 cucumber, peeled, seeded and chopped
• 1/2 red bell pepper, chopped
• 1/2 cup chopped red onion
• 1 small jalapeno, seeded and minced
• 1 medium garlic clove, minced
• 1/4 cup extra-virgin olive oil
• 1 lime, juiced (or 2 tablespoons lime juice)
• 2 teaspoons balsamic vinegar
• 1/2 teaspoon toasted, ground cumin
• 1 teaspoon sea salt
• 1/4 teaspoon freshly ground black pepper
• 2 tablespoons fresh basil leaves, chopped

Chop all ingredients and place everything (except the basil) in a big mixing bowl. Remove two cups of the chopped veggies and set aside. Blend the remaining veggies in a Vitamix or other blender. Mix the reserved chopped veggies back in to add a chunky texture.

Cover and chill for 1-2 hours, or overnight. Garnish with basil when serving.
