Superfood Protein Energy Balls -- packed with nutrition (and chocolate) for delicious energy!

One question people ask me all the time: “What energy bars do you recommend?”

Actually, most energy bars and protein bars on the market are full of additives and sweeteners.  Even the “healthy” bars at Whole Foods can have a lot of sugar in them. Bars such as Kind Bars and Lara Bars that use natural sweeteners like honey or dates may pack a punch of added grams of sugar.

That’s why I make my own and recommend my clients make their own at home. It’s so easy and delicious! I have a variety of different balls and bars that I enjoy making from time to time, and love that I can control the amount of sweetener AND pack in lots of nutrient-dense superfoods.

These Superfood Energy Balls are REALLY good for you. They are filled with protein and healthy fats for sustained energy, fiber to keep your feeling full (and regular), heart-healthy omega 3 fatty acids, and plenty of vitamins and minerals your body needs to function optimally. Calcium, zinc, magnesium - it's in there.

The best part is that these balls are made with ingredients that I always have in my pantry, and they do not require baking. You just mix in the food processor, form balls, and they are ready to eat.

I even added some bee pollen from my local farmers’ market which helps to relieve allergy symptoms and is also packed with protein, vitamins, and minerals.

Superfood Protein Energy Balls

Ingredients

  • 4 tablespoons Chia seeds (packed with protein, fiber, and omega 3s, plus calcium, zinc, and other vitamins and minerals; beneficial for digestion)
  • 1 tablespoon Bee Pollen (helps relieve allergy symptoms)
  • 2 teaspoons Organic Virgin Unrefined Coconut Oil (healthy medium chain fatty acids)
  • 2 teaspoons Raw Cacao Powder, plus enough to coat the balls (high in antioxidants, iron, and magnesium) - Get it here.
  • Scant 1/2 cup chopped Dates (about 10 large dates. I like Medjool dates)
  • ½ cup almond butter (or use ½ cup Almonds, soaked overnight & peels squeezed off)
  • 2 teaspoons Sesame Seeds (full of calcium, magnesium, zinc, and other minerals)
  • ¼ cup Pumpkin Seeds (Full of zinc, an essential mineral)
  • 6 tablespoons Hemp Seeds (packed with omega 3 essential fatty acids, protein, iron and vitamin E)
  • 2/3 cup unsweetened shredded coconut (healthy fat)
  • 3 tablespoons raw Cacao nibs (high in antioxidants, iron, and magnesium)

Directions


1.      Roughly chop dates.

2.      Add all ingredients to your food processor and blend until smooth.

3.      Roll into balls and dust with the Raw Cacao powder.

4.      Eat immediately, or store in the fridge or freezer.
