Pudding for Breakfast? You bet.

"What do you eat for breakfast that's fast and healthy?"

I get this question a LOT.

You know that breakfast is the most important meal of the day, right? Eating breakfast within an hour and a half of waking up, and making sure you get some protein, fat, and fiber will help set you up for success all day.

A typical American breakfast with lots of simple carbohydrates like a bagel, toast, muffin, or cereal will leave you hungry in an hour and can keep your blood sugar riding the roller coaster. This will leave you reaching for more carbs or a sugary snack.

Instead, eat a breakfast that will nourish you, balance your blood sugar, and give you steady energy until lunch.

If you're like many people I work with, you don't have a lot of time in the morning to prep breakfast. I've got you covered!

A typical breakfast for me is a green smoothie, since I love to start the day knowing I'm getting in fresh greens and fruits and some superfoods. Check!

But sometimes I want something different. This week, I've been loving this Blueberry Chia Seed Pudding I whipped up.

It's super fast.

You can make it in 5 minutes the night before, and grab and go in the morning. It even travels well if you need to bring breakfast to work.

It's full of protein, fiber, and healthy fat, and loaded with antioxidants.

Plus it tastes great. Who doesn't like pudding for breakfast?

If you've done one of my seasonal cleanses, you know I love my chia seeds.

Chia is an ancient food of the Aztecs and was considered an endurance food for runners as it would provide fuel all day.

Chia seeds are packed with fiber and will easily absorb any liquid you put them in. These little seeds will help clean your colon and keep you regular. They keep your body hydrated and help to balance electrolytes.

Chia is a complete protein, which means you can have pudding for breakfast and feel great about it! And chia is also a great source of heart-healthy omega-3 fatty acids.

Blueberry Chia Breakfast Pudding

  • 4-5 tablespoons chia seeds
  • ¼ teaspoon vanilla
  • ¼ cup coconut milk (canned, full-fat)
  • 1 ¼ cup almond milk
  • 2-3 drops pure liquid stevia (optional)
  • 1 cup fresh organic blueberries

Mix all ingredients in a bowl, cover, and put in the fridge overnight. It's all ready to eat in the morning!
You might like to top with additional blueberries or some goji berries and mullberries, as I did in the photo.
