Yay for the first kayaking outing of the season! Been waiting all winter for this.
Our favorite place to kayak is on the beautiful Patuxent River. It's so quiet and we spotted many ospreys and turtles sunning themselves.

Eating outdoors on a beautiful day has to be one of my favorite things in the world.
Today's picnic called for a really delicious lunch, in honor of Mother's Day and our first kayak adventure of the season.
I made a Macadamia-Parsley Pesto, which takes about 5 minutes in the food processor. My mom was crazy nuts over macadamia nuts and I always think of her when I eat them.
Then I used it to make these Best Ever Nori-Salmon-Veggie-Macadamia Pesto Wraps with what we had on hand.
Husband said (twice actually!): REALLY YUMMY.
Some smoked salmon, ripe avocado, red and yellow pepper, thinly sliced cukes, spinach, all topped with the Macadamia-Parsley Pesto.
Packed with protein, healthy fats, fiber, and veggies, and SQUISHY DELICIOUS with the pesto sauce.
Just wrap and roll on site at the picnic....
And savor savor savor the cool breeze, the sun on your back, and the view over the Patuxent...
You can put lots of goodies in Nori Wraps. The possibilities are endless. Here's my Mother's Day version...
Best Ever Salmon-Veggie Nori Wraps with Macadamia-Parsley Pesto (Easy!)
This makes about 4 wraps, and comes together in minutes.
For the wraps:
4 sheets sushi nori
¼ pound smoked salmon
1 small yellow pepper, sliced
1 small red pepper, sliced
½ cucumber, sliced in long thin strips
1 perfectly ripe avocado
Handful baby spinach leaves
4 tablespoons macadamia-parsley pesto (recipe below)
For the Macadamia-Parsley Pesto:
½ cup macadamia nuts
½ cup extra-virgin olive oil
1 bunch parsley, stems removed
1 clove garlic
Salt and pepper to taste
Mix all pesto ingredients in the food processor until well combined. Chop veggies. Assemble a little of all ingredients on a nori sheet and wrap it up. Enjoy!
Perfect for picnics, or a fast lunch or dinner.
