Summer's Here: Great Vegetarian Burger for Outdoor Grilling!

One of my absolute FAVORITE things about summer is eating outside. There's something about eating good food, hanging out with friends and family, and being outside in the sun that makes for a perfect combo. Summer picnics were a beloved family activity during my childhood, and they are no less fun today. Everything tastes better when you are outside. For vegetarians, heading to a summer BBQ party is not too exciting when there are only meat options. This is a great vegetarian burger recipe that can be made on the grill or on the stove. These protein-packed burgers are quick to throw together and very tasty. You can also make them a day in advance and refrigerate before you take to a summer BBQ to throw on the grill! I also served these on top of a fresh ripe and firm tomato from our garden, using it in place of the bun. A great gluten-free option! Read More

Crazy for Pumpkin! -- Holiday Recipes

My friends call me the Pumpkin Lady. I love cooking with all kinds of pumpkin and squash, especially in the fall. Butternut Squash with Black Rice and Mushroom Stuffing

Butternut squash is one of the easiest squashes to prepare and it is so versatile. From fall through winter, I love making Butternut Squash Soup, roasted squash, butternut and black bean burritos, and stuffed butternuts or acorn squash. Including naturally sweet foods in your diet is a great way to satisfy your body's sweet tooth without sugar and added sweeteners. I use all kinds of squash and pumpkins, onions, root vegetables like beets and rutabagas, plus sweet and pungent spices like cinnamon and clove to add some natural sweetness to my meals. Read More

Is Soy Good For You?....Sesame-Ginger Tempeh and Broccoli Stir-fry

OMG. This dish is so good. I doused the tempeh in a homemade sesame-ginger-garlic Asian marinade which made it sweet and pungent. Tempeh is a traditional Indonesian "cake" made from fermented (cultured) soybeans. Unlike tofu which does not have much flavor of its own, tempeh has a nutty flavor and a firm texture. It is nice pan-fried just in a little olive oil, but adding a marinade makes it especially delicious. Read More
