Almond Butter Oat Balls...YUM

I hosted an afternoon birthday party for a friend last weekend and wanted to make a special treat that was also healthful. Everyone loved these balls.

Sugar-free, dairy-free, gluten-free, made with natural ingredients, and dangerously delicious.

Warning: These were all gone in less than 24 hours, so you may want to make a double batch for sharing. They also will keep well in the fridge.

Since you don't need to bake them, they are a great treat for summer when you don't want to fire up the oven. And they are quick and easy to make.

PB balls in the making

Almond Butter Oat Balls

  • 1 c. natural organic almond butter or peanut butter
  • 1/2 c. raw honey
  • 2 c. rolled oats, ground
  • 1 T. unsweetened raw cacao powder (may use unsweetened cocoa powder)
  • Use any or all of these toppings for rolling the balls: unsweetened cacao powder, hemp seeds, ground walnuts, coconut flakes

1. Stir together the peanut butter or almond butter and honey in a large bowl.

2. Process the oats into a powder using a food processor.

3. Stir in the oats and cacao into the peanut butter and honey, and then mix well with your hands.

4. Form mixture into balls.

5. If using walnuts as one of your toppings, go ahead and give them a pulse in the food processor. Roll the balls in whatever toppings you'd like. They are ready to eat immediately. You can also put them in the fridge and enjoy chilled.
