Sometimes you just need a treat.
Decadent, and also healthy.
I have been loving this snack this month. It takes all of three minutes to prepare and is so rich and flavorful.
It's a great sweet treat for kids too -- and without the sugar!
I shared this simple recipe with one of my coaching clients recently and she wrote back:
"My son loves blueberry coconut surprise and he asked if I could serve it at his play date last weekend. We picked his friend up, and the very first thing he did when the kid got in the car was recite the lunch menu! (It was 9:30 a.m.)"
Thinking of lunch first thing in the morning. My kinda guy.
I'm telling you, you must try coconut butter, also called coconut manna. It is 100% pure pureed coconut. It's rich and creamy and buttery and also sweet, despite no added sweetener. You can spread it on toast, put a dollop on your oatmeal, or mix it with fresh berries as I do here for the perfect dessert or afternoon snack.
I sent a dear friend home with some recently. She promptly wrote, "P.S. I love that coconut butter. How does one not eat that stuff all the time?!"
Um. I do. And my body loves it too. Antioxidant-rich blueberries and satisfying, healthy fat. Yum.
It is pre-cleanse week this week, as I'm leading the Spring Cleanse starting on April 15. One of the things we're letting go of during the cleanse is our hold on refined sugar. I'm encouraging all my cleansers to eat natural sweeteners this week, and this is a great one to try!
Blueberry Coconut Surprise
(The perfect 3-minute snack or treat!)
Time: 3 minutes.
- 5 tablespoons coconut butter (also called coconut manna)
- 1 cup organic blueberries
- 2 teaspoons maple syrup (optional)
To prepare: Melt coconut butter, blueberries, and maple syrup on the stove in a small pot over low heat for a couple minutes just until warm. Ready to serve!
